The author (O'Brien) follows a romantic notion to raise cattle on a 1,00-acre ranch in the Dakota's. After many discouraging seasons working his *ss off without turning a profit, Obrien comes into contact with area ranchers with a novel idea, replacing their cattle with buffalo. Well written, and biologically acurate, O'Brien explains how the removal of buffalo from the Great Plains has deteriorated the ecosystem and why eating buffalo is not only good for the environment but also for the consumer.
